Malaga Mountain Wine, Telmo Rodriguez MR, Spain (½ bottle)

This MR version is a deliberately fresh style. After controlled drying for about a week, the wine is handled to avoid any oxidative blowout of fruit crunch and acid definition. Fermentation of chilled must takes place in stainless steel, and the wine is bottled without further work in order to retain fruit freshness and ripe, spicy-earthy acidity. Big sister Molino Real is fermented and then aged 20 months in new French oak barriques.
