An interesting "Mediterranean" styled gin that pushes the boundaries with its flavour profile. Rosemary, thyme, olive and basil harvested near the fishing village of Costa Dorada in Spain are used alongside the more traditional botanicals. All the botanicals except the citrus, are macerated individually and then brought together at the last minute. The Rosemary stands out, but the juniper is there and everything seems to work together. Garnish with a twig of Rosemary or even some basil, if you are feeling really flash put these two herbs through a green olive! 4 Star Diffords.
